ORANGE-BASIL GLAZED CORNISH HEN | |
3 tbsp. low-sugar orange marmalade 1/2 tsp. dried whole basil Vegetable cooking spray Green onion fans (optional) 1 tbsp. balsamic vinegar 1-1 1/2 lb. Cornish hen Orange slices (optional) Combine orange marmalade, balsamic vinegar and basil in a saucepan, cook over low heat until marmalade melts, stirring occasionally. Set aside and keep warm. Remove and discard giblets from hen. Rinse hen under cold, running water and pat dry. Remove skin, and trim excess fat, split hen in half lengthwise. Place hen, meaty side up, on a rack coated with cooking spray, place rack in a shallow roasting pan. Brush hen with 2 tablespoons orange marmalade mixture, bake at 350 degrees for 30 minutes. Brush hen with remaining marmalade mixture, bake an additional 30 minutes until juices run clear. Garnish with orange slices and green onion fans, if desired. Yield: 2 servings; 1 serving = 256 calories. |
