HONEY SQUARES 
3 c. all-purpose flour
3 tsp. baking powder
Zest of 2 lemons
1/2 c. plus 1 tbsp. honey
4 tbsp. unsalted butter
6 tbsp. oil
1/4 c. dark brown sugar
1 egg + 1 egg white
6 tbsp. buttermilk
6 tbsp. skim milk
24 almonds
6 candied cherries
Green candied fruit for leaves

Preheat oven to 350 degrees. Grease and line an 8 x 12 inch pan. Sift flour and baking powder into a bowl and lemon zest and make a well in center. Reserving 1 tablespoon honey put honey, butter, oil and sugar in saucepan. Heat until butter is melted, cool.

Whisk in egg, egg white, together, then whisk in buttermilk and skim milk. Pour into center of flour. Stir well and pour into pan. Bake 35 to 40 minutes until well risen and springy. Remove from oven immediately and brush top with honey. Decorate with almonds, cherries and green candied fruit.
