CATFISH WITH PECAN RICE 
1/2 c. cornmeal
4 sm. catfish, cleaned and skinned
Garlic, salt, and pepper to taste
1/4 c. peanut oil

In a shallow bowl, combine the cornmeal and seasonings. Pat the catfish dry and dredge it in the cornmeal mixture. Arrange the fish on a baking sheet and drizzle with peanut oil. Bake for 15-20 minutes until flaky. Serve over Pecan Rice. Place pecans halves down center of fish if desired as topper. Place slices of lemon on plate if desired.
