CORNISH HEN WITH RICE 
2 Cornish hens, cut in half
1 can cream of chicken soup
1 can cream of celery soup
1 c. long grain rice
2 to 3 cans water
Salt & pepper to taste

In large pan place hens, breast side down. Bake in 375 degree oven for approximately 30 minutes. Mix soups and rice with water. Remove hens from oven and turn over. Pour soup and rice mixture into pan around hens, do not pour over hens. Bake an additional 30 minutes or until rice is done. You may have to add some more water so rice won't be so dry.
