SOUTHERN CORNBREAD 
1 1/2 c. yellow corn meal
3/4 tsp. baking soda
1 tsp. salt
1 1/3 c. buttermilk
2 eggs, separated
1/4 c. melted shortening

Sift dry ingredients together. Add milk to egg yolks and add cornmeal mixture. Add shortening and mix again. Fold in stiffly beaten egg whites. Pour into greased pan. Bake 450 degrees for 25-30 minutes.
