JUMBO BANANA NUT MUFFINS 
2 1/2 c. flour
3/4 c. sugar
1 tbsp. baking powder
3/4 tsp. salt
6 tbsp. butter
1 c. walnuts
3 ripe bananas, cut up
2 eggs
1/3 c. milk
1/2 tsp. vanilla extract

Grease 6-7 three inch muffin pan cups. Preheat oven to 400 degrees.

In large bowl with fork, mix flour, sugar, baking powder and salt. Cut in butter until resembles coarse crumbs; stir in walnuts.

In covered blender at high speed, blend bananas, eggs, milk and vanilla only a few seconds until bananas are chopped. Stir banana mixture into flour mixture just until flour is moistened. Spoon batter into cups. Batter will fill cups completely. Bake until golden 25-30 minutes. Serve warm.
