VEGETABLE STUFFING 
1 c. long grain rice
1 can (16 oz.) whole tomatoes
1 c. water
3/4 tsp. salt
1 tsp. celery leaves, dried
1 tsp. parsley, dried
1 tbsp. oil
1 c. chopped onions
1 c. chopped green onions
1 med. zucchini, chopped & unpeeled
1 pkg. frozen peas (10 oz.)

Bring rice, tomatoes and liquid, water, salt, celery and parsley to boil. Break up tomatoes. Cover and simmer until liquids is absorbed, about 15 minutes. Saute vegetables in oil 5 minutes. Stir saute mixture and thawed peas into rice. Use stuffing as desired.
