ZUCCHINI FRITTERS 
3 c. coarsely grated zucchini
2 eggs
1/8 c. milk
2 tsp. flour
Salt and pepper

Mix together. Heat pan first; pour olive oil. Set little sections of zucchini; let them brown, turn them, turn heat down and let them finish cooking. Set on platter.
