OAT BRAN MUFFINS 
2 1/2 c. oat bran
2 tbsp. brown sugar
1/2 c. raisins
1 tbsp. baking powder
1/2 tsp. salt
1 c. skim milk
1 carton (4 oz.) Egg Beaters
4 tbsp. vegetable oil
Nuts, optional

Mix all of above; mix well by hand. Oil bottom of muffin cups only or use baking cups. Preheat oven to 425 degrees. Bake approximately 25 minutes or until brown.
