Fresh spinach, washed
1 can sliced water chestnuts
2 hard boiled eggs, cut up
8-10 slices bacon, fried crisp and crumbled
1 sm. red onion, cut in rings

Tear spinach in pieces and add the water chestnuts, eggs, bacon and red onion; mix.

DRESSING:

1 c. salad oil
1/2 c. tarragon red wine vinegar
1 clove garlic, chopped fine
1/2 c. sugar, you can reduce this
1/3 c. catsup
Dash salt

Combine the dressing ingredients in a blender and toss lightly over the salad. Make dressing ahead for better flavor.
