YELLOWTAIL WITH BANANAS 
1 lb. Yellowtail fillets
1/4 lb. butter
1 lemon or lime
Paprika
1 ripe banana

Coat baking dish with butter. Place snapper fillets in dish with thin slices of banana on top. Melt butter and lemon juice, then pour on top. Sprinkle with paprika. Bake at 325 degrees for 20 to 30 minutes. Test for doneness with fork.

Incredibly moist and cleverly tasty. It was interesting to have a banana be guest flavor for this dish, but I was pleasantly surprised, and since we needed no fattening mayonnaise based tartar sauce to accompany it, I will use this recipe over and over. Thank you!
