CANADIAN CHEESE SOUP 
6 tbsp. butter
1/2 c. each chopped celery, carrots, onions or any other vegetable (broccoli, cauliflower, etc.)
6 tbsp. flour
1/4 tbsp. salt
1 qt. milk
1 c. diced sharp Cheddar cheese
1/2 c. chicken broth (canned, homemade or bouillon)

In a deep saucepan melt butter and saute vegetables. Stir in flour and salt. Gradually stir in milk. Add cheese and cool stirring constantly until mixture thickens and cheese melts. Add chicken broth and heat.
