2 eggs 2/3 c. sugar 1 tsp. vanilla 1/2 tsp. baking powder 1/2 tsp. salt 2/3 c. all purpose flour 1 c. finely cut dates 1 c. chopped nuts Confectioners' sugar Beat eggs, sugar, vanilla, baking powder and salt until thick and ivory colored. Combine flour, dates and nuts. Stir into egg mixture. Spread in 8"x8" dish. Shield corners with foil. Place dish on inverted saucer in microwave oven. Microwave at High 5 to 8 minutes, or until almost dry on top, rotating 1/4 turn after 2 minutes, then every minute. Remove foil after 4 minutes. Cool bars directly on countertop. Cut into about 1" squares. Roll squares in hands to shape into balls. Place balls in plastic bag; add about 1/4 cup confectioners' sugar. Turn bag over and around until balls are coated. |
