MOCK CHICKEN ALMOND RICE 
2 lb. bulk sausage
2 c. uncooked rice
1 green pepper, chopped
2 med. bunches celery, chopped
2 lg. onions, diced
3 lg. pkg. chicken noodle soup
9 c. water
2 c. blanched, sliced almonds

Brown sausage. Remove meat. In fat cook celery, onions and peppers until tender. Remove excess fat. Boil water, add soup and boil again. Mix everything together in a roaster pan.

Bake at 350 degrees for 1 hour, covered. Uncover and bake for additional 1/2 hour. Stir only twice during cooking. Serves 20.

Goes well with Polynesian Baked Chicken.
