POLYNESIAN TURKEY SALAD 
3 c. cooked, cubed turkey
2 stalks celery, thinly sliced
1 tsp. curry powder
1/4 tsp. salt
3/4 c. mayonnaise
15 1/2 oz. can pineapple chunks, drained
1 banana, sliced
1/2 c. salted peanuts or cashews
1/2 c. coconut
11 oz. can mandarin oranges

In large bowl, combine first 6 ingredients; toss lightly. Cover and chill. Before serving, slice banana; add to turkey mixture with peanuts. Serve in lettuce cups; garnish with coconut and oranges.
