TORTELLINI SOUP 
1 lb. mild Italian sausage, browned & drained
1 c. chopped onions
2 cloves garlic
5 c. beef broth
1/2 c. water
1/2 c. dry red wine
2 c. canned tomatoes, squeezed between clean hands
1 c. chopped carrots
1/2 tsp. basil
1/2 tsp. oregano
8 oz. tomato sauce
1 1/2 c. sliced zucchini
2 c. tortellini
3 tbsp. chopped parsley
1 med. green pepper, sliced into thin strips
Parmesan cheese

Cook first 8 ingredients, spices and tomato sauce 1 hour. Add zucchini, tortellini, parsley, green pepper and cook 45 minutes longer. Sprinkle with Parmesan cheese.
