FRESH SPINACH SALAD 
1 lb. fresh spinach, wash, stem & put in ice water
Cut up in pieces 1/2 lb. bacon, fry crisp
1 red onion, sliced into thin rings
1 hard boiled egg, chopped
Garlic croutons

Fry bacon crisp and remove from skillet. Add to the bacon grease 1/3 cup wine vinegar or cider vinegar, 2 tablespoons water and 1/2-3/4 cup sugar. Bring to a boil. Combine spinach, onion, bacon, chopped egg and pour hot vinegar mixture over this. Add croutons just before serving.
