MORNINGLORY MUFFINS 
2 c. flour
1 1/2 c. white sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. grated carrots
1/2 c. raisins
1/2 c. nuts
1/2 c. coconut
1 apple, grated
3 eggs
1 c. salad oil
2 tsp. vanilla

In large bowl, mix flour, sugar, soda, salt, and cinnamon. Stir in carrots, raisins, apple, and coconut. In bowl, beat eggs, oil, and vanilla. Stir in flour mixture until just combined. Fill well greased muffin tins. Fill to top. Bake 20 minutes at 350 degrees. Makes 14 large muffins.
