PICKLED OKRA | |
3 lbs. fresh okra (small pods) 6 cloves garlic 6 pods hot pepper 6 tsp. dill seed 6 tsp. celery seed 1/2 c. plain salt (not iodized) 1 c. sugar 1 qt. white vinegar 1 qt. water Wash okra well. Pack the pods into 6 pint jars. Do a fancy pack, if feeling artistic. Otherwise, just put the pods in the jars. Into each jar put a clove of garlic, a teaspoon of dill seed, a teaspoon of celery seed, and a pod of hot pepper. Put other ingredients in pan, mix well and bring to boiling. Pour into jars to within 1/2 inch of top. Seal jars. Process in hot water bath (enough boiling water to cover jars) for 6 or 7 minutes. Cool on wire racks. |
