1 c. flour 1 egg 1/2 tsp. salt Water 1 med. potato 4 slices American cheese (yellow) 1 med. onion 3 tbsp. butter Cook one medium potato. Mash and set aside. Saute 2 medium onion (chopped fine) in 3 tablespoons butter. Add onion to potato. Shred 4 slices yellow American cheese. Add to potato mixture and mix well. Set aside. In medium bowl, mix flour and salt. Make well in center of flour. Drop in egg stirring from center out to mix. Add several teaspoons of water until mixture cleans side of bowl and forms ball. Roll out dough on floured board to thickness of pie crust. (Roll 1/2 dough at a time) Cut with biscuit cutter. Place 1 teaspoon of potato mixture in center. Fold over dough and seal edges. Cook in boiling water until Pierogi floats. Serve with melted butter. Very good with Kielbasa and cabbage. |
