CHEESE CHOWDER 
2 c. boiling water
1/2 c. diced carrots
1/4 c. chopped onion
2 c. diced potatoes
1/2 c. diced celery
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 c. butter
1/4 c. flour
2 c. milk
2 c. cubed Velveeta cheese
1 c. cubed ham (can also use broccoli, shrimp, bacon, etc.)

Add water to vegetables, salt and pepper in large pan. Cover and simmer for 10 minutes. Do not drain. Make white sauce with flour, butter, milk; add cheese and stir until melted. Add to vegetables, add ham, heat but do not boil.
