ARMADILLO EGGS 
2 cans whole jalapeno peppers
1 lb. pork sausage
8 oz. Monterey Jack cheese
1 1/2 c. Bisquick
2 eggs, beaten
1 pkg. oven fry coating mix, (pork flavor)

Preheat oven to 325 degrees. Cut 2 ounces of cheese in small pieces, grate other 6 ounces of cheese and mix with sausage and Bisquick. Knead well, set aside. Slit and scrape seeds from each pepper (leave stems on peppers). Rinse peppers and stuff each one with a small piece of cheese. Separate dough into small patties, flatten the patties and wrap around peppers. Make sure ends are closed and only the stems are showing. Beat eggs in a bowl. Spread coating mix on a plate and dip each wrapped pepper into the beaten egg, then roll into coating mix. Bake on a cookie sheet for 15 minutes, turn over and bake 15 minutes more.
