QUICK AND EASY POTS DE CREME 
1 (6 oz.) pkg. chocolate chips
3/4 c. boiling milk or 1/2 & 1/2
1 1/2 tsp. dry instant coffee
2 eggs
1 tsp. vanilla

Place chocolate chips in blender. Add instant coffee to hot milk. Pour milk/coffee over chocolate and blend for 2 minutes. Add eggs and vanilla and blend. Pour into demi-tasse cups which have been rinsed out with cold water. Chill in refrigerator for 3 to 4 hours. Top with shaved chocolate and whipped cream before serving in cups with saucers. Serves: 8.
