BANANA AND ORANGE SALAD 
1 pkg. orange gelatin
3/4 c. boiling water
2 med. oranges
1 c. cottage cheese
1/2 c. pecans, chopped
2 med. bananas
1 c. cold evaporated milk

Add boiling water to gelatin, stir until dissolved. Cool. Peel oranges, section and cut into pieces over a bowl to catch juice. Squeeze orange membrane to extract remaining juice. Stir juice and pieces, cottage cheese, and pecans into gelatin mixture. Mash bananas; stir into gelatin mixture. Then stir in milk and blend well. Chill for 3 to 4 hours until firm. Turn out of mold on to lettuce leaves. Serves 8.
