PEANUT BUTTER CRISSCROSS COOKIES 
1 c. shortening
1 c. granulated sugar
1 c. packed brown sugar
2 eggs
1 tsp. vanilla
1 c. peanut butter
2 1/2 c. all-purpose flour
2 tsp. baking soda

Cream together shortening, sugars, egg, vanilla and peanut butter until smooth. Sift dry ingredients and add to mixture. Drop by rounded teaspoonfuls on greased cookie sheet. Press with back of floured fork to make crisscross. Bake at 350 degrees for 8 to 10 minutes. Makes about 5 dozen cookies. For richer cookie, use 2 cups flour.
