PEANUT - DATE BALLS 
1/2 c. butter
1/4 c. firmly packed dark brown sugar
1 egg, beaten
1 c. chopped dates
1/4 c. salted peanuts, chopped
1 tsp. vanilla extract
2 c. crisp rice cereal
Powdered sugar

Combine butter, brown sugar, egg and dates in a heavy skillet. Cook over low heat, stirring constantly, 5 minutes or until mixture is thickened. Add peanuts and vanilla; stir well.

Combine date mixture and crisp rice cereal; stir well. Allow mixture to cool to touch. Shape cookie mixture into 1 inch balls, place on waxed paper. Sprinkle cookies with powdered sugar. Yield about 3 dozen.
