KEY LIME MUFFINS 
2 c. flour
1 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1/4 c. milk
2 eggs
1/4 c. olive oil
1 tsp. lime zest (rind), grated
1/4 c. lime juice

Stir together all ingredients in mixing bowl with spoon. When thoroughly mixed, spoon into paper-lined or greased muffin tins. Bake in preheated 350 degree oven for 20 minutes. Yields: 12 muffins. Serve warm with butter, jam, or marmalade.
