CLASSIC CITRUS SALAD 
DRESSING:

1 tbsp. natural rice vinegar
1/4 tsp. Dijon-style mustard
1/4 tsp. sugar
Dash each salt/pepper
1/2 tsp. olive oil

SALAD:

2 c. fresh spinach leaves, washed, dried, and chilled
1 sm. orange, peeled and segmented
2 tbsp. finely sliced red onions
3 walnut halves, coarsely chopped

To make dressing, in small bowl whisk together dressing ingredients.

To make salad, arrange salad ingredients in serving bowl.

Pour dressing over salad and toss.

Makes 1 serving.
