MEXICAN - STYLE HADDOCK 
1 pkg. (12 oz.) Gorton's Fishmarket Fresh frozen haddock fillets
1/2 tsp. salt
1/4 tsp. pepper
1 sm. onion, thinly sliced
1 tomato, peeled and cut into 1/2 inch slices
1 tbsp. lime juice
1 tbsp. veg. oil
1 tbsp. snipped parsley
8 pitted ripe olives, sliced

Heat oven to 375 degrees. Arrange frozen fillets in ungreased square baking dish, 8 x 8 x 2 inches. Sprinkle with salt and pepper. Layer onion and tomato on fillets; sprinkle with lime juice, oil and parsley. Top with olives. Cover and bake 30 minutes. Uncover and bake until fillets flake easily with fork, about 15 minutes. 4 servings.

Microwave directions: Arrange frozen fillets with thickest parts to outside edges of square microwavable dish, 8 x 8 x 2 inches. Continue as directed except-cover with vented plastic wrap and microwave on high (100%) 6 minutes; rotate dish 1/2 turn. Microwave until fillets flake easily with fork, 5 to 8 minutes longer.

Since microwave ovens vary in power, you may need to adjust your cooking time.
