PINEAPPLE COCONUT SQUARES 
1 c. butter
1/2 c. sugar
1 tsp. vanilla
2 1/4 c. flour
2 1/4 c. crushed pineapple
3 eggs
1 c. sugar
1 tsp. vanilla
1/4 c. butter
1 c. coconut

Mix butter, vanilla with sugar in mixer at medium speed. Add flour to mixture. Press into 9x12 inch pan. Prick dough with fork. Bake dough for 15 minutes. Spread drained pineapple on top of dough. Sprinkle mixture of other ingredients on top. Bake for 20 minutes or until golden brown at 350 degrees. Yield: 25 squares.

To the person who said 'my only problem is with cutting them'. Make sure they are good and cold before trying. Use a very sharp knife. This does eliminate taste testing as soon as they cool from the oven. To overcome this problem, just spoon up a little from the corner. I have made these for years now, usually just for Christmas, they are that decadent! I have just made a double batch for wedding next weekend.
