WHOOPIE PIES 
1 c. shortening
2 c. sugar
2 eggs
1 c. dry cocoa
1 c. hot water
1 c. sour milk (or buttermilk)
2 tsp. vanilla
4 c. sifted flour
2 tsp. salt
2 tsp. baking soda

Preheat oven to 400 degrees. Cream shortening and sugar, add eggs and beat. Add milk and vanilla. Sift the flour, cocoa and salt into creamed mixture. Dissolve the baking soda in the hot water. Add to mixture. Drop by tablespoon onto greased cookie sheet. Bake 12 to 15 minutes or until done. Make filling.

WHOOPIE PIE FILLING:

2 egg whites, beaten stiffly
4 tbsp. milk
1 1/2 c. shortening
2 tbsp. vanilla
4 c. powdered sugar

Add vanilla to beaten egg whites. Add flour, milk and 2 cups powdered sugar. Beat until creamy; add remaining powdered sugar and shortening. Beat until smooth. Spread on a cookie and sandwich with another cookie.
