CHOCOLATE CHESS PIE 
1 c. light brown sugar, packed
1/2 c. plus 1 tbsp. sugar
1 tsp. all-purpose flour
2 eggs
1/4 c. milk
1 tsp. vanilla
1/2 c. (8 tbsp.) unsalted butter
1 1/2 oz. unsweetened chocolate
1 (9 inch) unbaked Basic Pie Shell
1 c. whipping cream, chilled
Grated chocolate (for garnish, optional)

In medium bowl, combine brown sugar, 1/2 cup sugar, and flour. In another bowl, combine eggs, milk, and vanilla. In small saucepan over low heat, melt butter and unsweetened chocolate, then gradually beat in egg mixture until blended. Pour batter into Basic Pie Shell and bake in center of oven at 325 degrees for 35 to 40 minutes or just until set.

In chilled bowl, beat cream and remaining one tablespoon sugar just until soft peaks form. Serve pie warm. Top each wedge with dollop of whipped cream and sprinkle with grated chocolate, if desired. Serves eight.
