CHICKEN ENCHILADA CASSEROLE 
1 med. onion, chopped and sauteed in 1-2 tbsp. butter
1 can cream of chicken soup
1 can cream of mushroom soup
1 c. chicken broth
1 sm. can chopped green chilies, drained
2-3 lb. chicken, cooked and boned
1 pkg. corn chips or Doritos
10-16 oz. grated Cheddar cheese

Combine the soups, broth, chilies, browned onion. Add pieces of chicken and stir well. In buttered baking dish, place a layer of broken chips. Pour the chicken mixture over broken chips. Top with a layer of grated cheese. Bake 30 minutes at 350 degrees.
