POTATO CANDY 
1/2 c. mashed potatoes, warmed (homemade, not boxed)
1 lb. confectioners sugar
1/2 c. peanut butter

Mix warm potatoes with sifted sugar. Roll out and spread with peanut butter. Roll up like a jelly roll and slice.

This is an all-time favorite of mine. I have great memories of waiting for the potato to cool. We mixed a small cold cooked potato with the sugar then cooled the mix so it would roll, spread the peanut butter and sometimes jelly, cooled in fridge for about 30 minutes so it would slice just right. My kids love this. Thanks for the posting. Pass it on. It's kid friendly and aka "the diabetic coma" as Granny called it. Such an old-time recipe!!
