MANDARIN ORANGE & PINEAPPLE SALAD | |
1 (11 oz.) can mandarin oranges, drained 1 (20 oz.) can pineapple chunks, drained 2 c. lg. curd cottage cheese 1 (8 oz.) carton frozen whipped topping, thawed 1 tsp. vanilla extract 1 (6 oz.) pkg. orange-flavored gelatin 1/4 c. chopped pecans 1/4 c. flaked coconut Combine first 5 ingredients. Sprinkle gelatin over mixture, and stir well. Spoon mixture into a 13 x 9 x 2 inch dish. Combine pecans and coconut; sprinkle over salad. Chill 6 hours or overnight. Yield: 15 servings. |
