POLE LINE CHILI 
2 lbs. hamburger
1 (8 oz.) tomato sauce
12 oz. beer
1 tbsp. crushed red pepper
2 med. cloves garlic, chopped
1 onion, chopped
1 (16 oz.) chili beans
1 1/4 tsp. oregano
1/2 tsp. paprika
1 1/2 tsp. cumin
1 1/4 tsp. salt
Cayenne pepper
3/4 lb. Monterey Jack cheese, grated

Brown meat and drain fat. Add tomato sauce, beer, red pepper, garlic, onion, oregano, paprika, 1 teaspoon cumin and salt. Stir to blend. Bring to boil; lower heat and simmer 1 hour, uncovered, stirring occasionally. Taste - adjust seasonings and add cayenne and beans. Simmer uncovered another hour. Stir in cheese and remaining cumin. Simmer 1/2 hour, watching that cheese doesn't stick.
