COUNTRY KITCHEN COBBLER 
3/4 c. cooked rhubarb
1 c. sugar
1 sm. box strawberry Jello
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. butter, softened
1 c. sugar
1 egg, beaten
3/4 c. milk
1 tsp. vanilla
1 tsp. cinnamon, mixed with 1 tbsp. sugar

Combine rhubarb, sugar (1 cup) and Jello in bowl and set aside. Sift flour, baking powder and salt together. Cream butter and sugar and beat in egg. Add dry ingredients, along with milk and vanilla. Blend until batter is smooth.

Make a layer of rhubarb mixture on bottom of deep buttered baking dish. Spread batter over top and sprinkle with cinnamon/sugar mixture. Bake at 350 degrees for 35-40 minutes. Cut in squares to serve.
