CHICKEN CASSEROLE 
2 c. diced chicken
1 sm. onion, chopped
1 can cream of chicken soup
1/2 lb. Velveeta
1 box Stove Top stuffing

Place chicken and onion in bottom of 9x13 casserole dish. Mix soup and Velveeta, heat until Velveeta is melted. Pour soup and Velveeta mixture over chicken. Prepare stuffing according to box directions, then put on top of mixture. Bake in 350 degree oven for 30 minutes.
