PERSIMMON COOKIES | |
1 tsp. baking soda 1 c. persimmon pulp 2 c. flour 1/2 tsp. each cinnamon, cloves, nutmeg and salt 1/2 c. shortening 1 c. sugar 1 egg, beaten 1 c. chopped walnuts 1 c. raisins Dissolve soda in persimmon pulp and set aside. Mix flour, spices and salt until fluffy, then beat in egg. Stir dry ingredients and persimmon mixture into creamed mixture. Stir in nuts and raisins. Drop by teaspoonful onto well greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes. Makes 4 dozen. |
