RICE AND SHRIMP SALAD 
3 c. cold cooked rice
1 c. boiled shrimp
6 hard-cooked eggs, sliced
1 c. sweet or sour pickles, diced
Salt and pepper to taste
1 c. celery, diced
1 c. stuffed olives, finely chopped
Salad dressing

Combine all ingredients. Garnish with additional hard-cooked eggs. Yield: 6-8 servings.
