DOLLIE'S CARAMEL PECAN PIE 
3 egg yolks
1/2 c. sugar
2 tbsp. butter
1 tsp. vanilla
3 tbsp. flour

Stir all ingredients together until very cream in medium size saucepan. Set aside. Brown 3/4 cup sugar in large skillet, stirring often. When sugar is melted and smooth, add 2 1/2 cups milk. When milk and sugar is all dissolved, add to egg mixture stirring over low burner as you add. Cook until thick. Cool, add 1 cup chopped pecans. Pour into cooked 9 inch pie crust. Top with meringue made from 3 egg whites, 1/4 cup sugar, 1 teaspoon vanilla. Beat egg whites until they form stiff peaks, add sugar and vanilla. Mix well. Cover caramel filling. Cook at 350 degrees for 10-15 minutes or until golden brown. Makes 1 pie.
