FRUIT CHEESECAKE 
1/2 c. evaporated skimmed milk
4 tbsp. lemon juice
6 tbsp. water
2 tsp. Sweet `N Low (8 packets)
1 env. unflavored gelatin
1 c. cottage cheese
1/2 tsp. vanilla extract
1 c. well-drained dietetic fruit cocktail
Crust optional

Place milk in freezer. Mix lemon juice with water, Sweet `N Low and gelatin. Cook and stir until gelatin dissolves, then cool. Put cheese through sieve or blender and beat until smooth. Stir in gelatin mixture and vanilla, blending well. Chill until partially set.

Whip frozen milk until it peaks. Fold fruit partially set cheese, then fold in whipped milk. Spoon into springform pan or square cake pan and refrigerate overnight. If you like, you can make a crust of vanilla wafers. Serves 6 at 55 calories per serving without crust. With crust add another 25 calories per serving.
