COLD TOMATO SOUP 
1 clove garlic, cut
4 tomatoes, peeled, seeded and chopped
1 cucumber, peeled, seeded and chopped
1 green pepper, minced
1/2 c. Bermuda onion, chopped
2 tbsp. olive oil
2 tsp. lemon juice
1 tsp. salt
1/4 tsp. white pepper
Dash Tabasco sauce
1 (46 oz.) can chilled tomato juice
Chopped parsley

Rub mixing bowl with garlic. Add tomatoes, cucumber, green pepper, onion. Mix well. Add olive oil, lemon juice, and seasonings. Stir well, cover and chill in metal serving pot for at least 4 hours. One hour before serving add chilled tomato juice and mix thoroughly. Adjust seasonings. Serve in chilled bowls. Top with chopped parsley. Serves 6.
