“TURKEY STUFFING” IS IN:

TURKEY STUFFING 
Unsalted saltines (1 lb. per 10 lb. turkey)
Sausage meat (1/2 lb. per 10 lb. turkey)
3 or 4 stalks of celery, chopped fine
2 med. onions, chopped very fine

Roll crackers, sauté onions and celery in butter. Place in cracker crumbs. Sauté sausage, just until color changes and heavy grease is gone. Drain quickly, mix into cracker mixture.

SPICES (optional - use any favorite seasonings preferred):

freshly ground black pepper, to taste
1 tsp. poultry seasoning
1/4 tsp. ginger
1/4 tsp. nutmeg
2 or 3 eggs

Mix all in together.

1 c. liquid (evaporated milk or low sodium or homemade chicken broth)
sea salt, to taste (about 1/2 tsp)
