SCRAMBLED EGGS WITH SHRIMP 
1 tbsp. butter
1/2 lb. shrimp, shelled and deveined
8 eggs, beaten well
Salt and pepper
4 slices toast, quartered

Melt butter in skillet, saute shrimp for 1 minute, add eggs, and scramble for 2 to 3 minutes, depending on desired consistency. Sprinkle with salt and pepper. Serve over toast. Serves 4.
