PECAN STICKY MUFFINS 
2 c. flour
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
2 eggs
1 c. milk
1/4 c. vegetable oil
1/2 c. brown sugar, packed
1 tsp. vanilla

Topping:

1/4 c. butter, melted
1/4 c. brown sugar, packed
1 c. pecans, chopped

Preheat oven to 350°F. In a large bowl, combine flour, baking powder, cinnamon and salt. In another bowl, beat the eggs, milk, oil, sugar and vanilla until smooth. Stir dry ingredients just until moistened.

Into each greased muffin cup, spoon 1 teaspoon butter, 1 teaspoon brown sugar and 1 heaping tablespoon pecans. Top each with 1/4 cup batter.

Bake at 350°F for 25 to 30 minutes or until muffins test done. Invert pan onto a piece of foil. Let stand 2 minutes; remove pan. Serve warm.

Makes 1 dozen.
