GREEN TOMATO RELISH | |
4 qt. green tomatoes, chopped 3/4 tsp. salt 2 tsp. allspice 2 tsp. pepper 2 tsp. ginger 3 tsp. mustard 3 tsp. cloves 1/2 c. white mustard seed 2 lb. sugar 4 green peppers or 2 green & 2 red 2 chopped onions 2 qt. vinegar Add salt to chopped tomatoes, cover. Let stand 24 hours. Drain. Add 2 quarts water and 1 quart vinegar; boil 15 minutes only. Drain and throw juice away. Put remaining quart of vinegar in large kettle; add sugar and spices; heat to boiling point. Add tomatoes, peppers and onions. Bring to boiling and boil 15 minutes. Put in jars and seal. Makes 8 pints. |
