SOUR CREAM PEACH PIE 
1 egg yolk only
1 c. sour cream
1/2 to 2/3 c. sugar
1/4 tsp. vanilla
1/4 tsp. cinnamon
3 or 4 peaches, peeled and sliced
1 nine inch pie crust

Prepare your favorite 1 crust pastry recipe or use 1 regular frozen pastry crust. Set aside. Combine all ingredients except peaches. Slice peeled peaches into unbaked pie crust. Pour the egg mixture over the top. Bake in preheated 425 degree oven for 15 minutes. Reduce heat to 350 degrees and bake for 30 minutes more. The pie will set as it cools. Store leftover pie in refrigerator.
