PEANUT CHICKEN 
2 eggs
1/4 c. flour
1 tbsp. sugar
1/2 tsp. salt
1 tbsp. water
2 tsp. dry sherry
2 whole boneless chicken breasts
1 c. dry roasted peanuts, finely chopped
1 c. peanut oil

Beat eggs slightly. Add flour, sugar, salt, water and dry sherry. Beat until smooth. Thinly slice chicken parallel to the grain into pieces about 2 inches square. Dip chicken pieces in egg mixture and then coat with peanuts. Place on wax paper. Cook chicken in hot peanut oil. Makes 4 servings.
