FRITTER BATTER FOR FRUITS 
1 c. flour
2 tbsp. sugar
1/2 tsp. salt
Grated rind of 1 lemon
2 eggs
1/2 c. milk

Mix and sift the dry ingredients; add beaten yolks, lemon rind and milk. Beat, cut and fold in the beaten whites of eggs and use for any kind of fruits: apples, bananas, peaches, oranges, etc.
